OPERATING PRINCIPLE
The mixture is drawn in by the pumping pistons of the industrial homogenization system and sent at high pressure to the homogenizing valve. Upon exiting, the product undergoes micronization due to forces such as sudden acceleration, resulting in a speed of approximately 9,300 cm/sec, intense cavitation, and friction between the particles. Our industrial ice cream machine, the Omnigel 400, produces fat globules smaller than 3.5 µm (0.0035 mm). This micronization strips the fat globules of their surface coating, increasing their exposed surface area for emulsifiers to work, stabilizing the water-oil phase and giving the ice cream an even softer texture and the dry sensation characteristic of high-quality ice cream.
OPERATION WITH A SINGLE PASTEURIZER
When the mixture reaches approximately 50°C (after allowing the sugar to dissolve perfectly), the homogenizer is turned on to recirculate the treated product in the pasteurizer tank.
For statistical calculations, the mixture volume should be treated 5 times to ensure complete homogenization of the product particles.
Optimal operating time: Mixture volume in liters / 1.33
Example: If there are 30 liters of mixture, the homogenizer should operate for about 23 minutes.

OPERATION WITH A DOUBLE PASTEURIZER
When the pasteurization temperature (85-90°C) is reached, the homogenizer starts to send the treated product to the second pasteurizer tank, where cooling begins immediately.
