Traditional baking

The ANULAR AST steam oven combines a traditional annular pipe construction system with an innovative combustion chamber concept that reduces the masonry part to a minimum.

EQUIPMENT

The indirect heating system consists of 27 mm diameter and 4.5 mm thick annular pipes; these pipes are combined in modular ring-shaped tube nests and heat the floors and ceilings of the various baking chambers uniformly. This new construction system permits exploiting to the full the heat produced by combustion. The oven is also more sensitive to temperature changes and therefore more versatile and adaptable to different production needs. The baking chambers are completely closed and separate from each other. For a more traditional baking system we suggest the ANULAR oven ASTM with wooden working, masonry parts and furnace for solid fuels (as optional) placed in the front- or in the left-side of the oven.

- SMART control unit: SMART digital control unit with display for controlling: baking temperature, baking time with end of baking alarm, steam inlet time, lighting, steam evacuation valve opening/closure.

- Perfect baking: Perfect and delicate baking thanks to the numerous thick Mannesmann pipes which uniformly cover the whole surface of the baking chamber to guarantee impeccable results.
 
- Maximum steam output: Abundant steam delivery thanks to the heavy steam generators installed above the fume recirculation duct. This technology makes it possible to have a powerful heat source so that the steam generators quickly recover after each use.
